Friday!! 7/1

Hello!  Sorry for the lack of post yesterday, work has been pretty crazy this week!  I’m becoming a bit concerned of my ability to keep up with this as we get deeper into the season.  I work at Donna Salyers’ Fabulous-Furs, which is a 4th quarter business (obviously).  We bust ass October-February and pretty much plan and evaluate the rest of the season.  We’ve been working on getting together catalog stuff and it’s been a little stressful/BUSY!  I like it though, I hate being bored!  (that’s when I eat the most!)
Anyway, I didn’t make it to the gym this morning again… but yesterday I cleaned out our fridge at work then went to my mom’s house, cleaned her kitchen, cleaned out her fridge, cooked dinner for 9 people, fed 2 kids then cleaned up the kitchen again and bathed Nora and got her ready for bed… not exactly a ‘lounging on the couch’ kind of evening!  Nora didn’t sleep well last night, which means I didn’t either, and I just didn’t have the energy when I woke up.  My knee is still really stiff in the morning as well, so I’m always nervous about hitting the gym first thing.  I plan to get back into the swing of things with daily gym visits and working on the elliptical next week.  (cross my fingers!)

Yesterday food was normal and then for dinner I made sautéed chicken, lemon brown rice and steamed corn.  Yummy and healthy! 
Chicken was basic, just threw some partially frozen chicken breasts in a skillet with garlic and a soy-type of sauce and covered with a lid.  Leaving the chicken partially frozen and covering with the lid keeps you from having to use any oils to cook the chicken!  It stays moist from the water released from the chicken as it thaws and almost steams with the lid on.  Learned that from my momma J

Lemon Brown Rice: (this made enough for 8 people – adjust accordingly)
3c Water
1 ½ c Brown Rice
2tbs Unsalted Butter
½ lemon
½ c Fat Free Feta
S&P

-Cook rice w/ butter as normal.
-Once rice is cooked, remove from heat and squeeze juice of ½ a lemon and season w/ S&P. 
-Allow to cool approx 5 min then stir in Feta
That’s it!

Food today is a little whack-a-doodle.  Today is our 4th of July cookout at work! 
Breakfast:
Choc Protein Shake w/ Skim Milk
Banana w/ natural crunchy pnut butter (I was hungry!)

Snack:
Weight Watchers String Cheese
Raw Almonds

Lunch:
Cookout food;  Most likely grilled chicken, salad and fruit!  (I got to plan the cookout J)

Dinner:
I believe we’re having salmon at mom’s tonight?

Tomorrow we’re having a little cookout at mom’s and doing grilled pizzas again J  I can guarantee that I will be eating a lot of carbs tomorrow but it should be healthy!  My mom uses whole wheat flour to make the pizza doughs and we have all fresh ingredients!  We’re going to the organic product market today after I get off of work J

Well, I’ll try to post again Sunday or at least Monday.  However, if I’m unable to do so, I hope everyone has a safe, healthy and FUN holiday weekend!
