I upped the resistance on the elliptical and the bike 1 notch and it seemed to work out just fine J. The elliptical took a little longer than yesterday to complete the mile, but I’m assuming that’s due to increased resistance. The leg workouts went fine, not too much discomfort in the ol’ knee. I wanted to work my arms but knew that I wouldn’t have time since the bike takes so much time so I decided to just do my arm excercises while riding! It worked out really well and actually helped pass the time. I tried to maintain a speed of 75-90 RPM, averaging at around 80. It felt really great to sweat J. I also found today that I am OVER all of the music on my iPod and need an update STAT! I’m going to try to work on that this weekend.
For dinner tonight, I made a big taco salad w/ grilled chicken, bagged romaine mix salad, homemade black bean and corn salsa, onion, fresh tomato, FF sour cream and FF cheddar cheese. It was YUMMY! I’ll be honest, I had 2nds lol. After looking over my nutritional intake yesterday, I decided to add a bit to my breakfast.

I found the recipe for the Eggplant slices online and tweeked a bit to my liking:
Eggplant Snack:
1 Eggplant, peeled and sliced into ½” rounds
Egg Whites (liquid or real)
Reduced Fat Parmesan Cheese
Granulated Garlic (or Garlic powder)
A PINCH of cayenne
Just peel and slice the eggplant, coat with egg whites then coat with parmesan (seasoned w/ garlic and cayenne)
Grill on the George Forman (sprayed w/ nonstick spray) for 10-15 minutes – keep an eye on them, flip every once in a while. They should have grill marks and turn golden.
Then eat! I’m going to have them for lunch and I’m excited to see how they turned out! I may skip the cayenne next time and just use hot sauce when I eat them? I’m going to re-heat them in the toaster oven at work so they keep their crisp-ness.
