Happy Friday!

It’s Friday!  Well last night was wonderful!  I came home from work, cooked dinner for Bran and Nora (see below) and then went to dance at Leapin Lizard Lounge!  It was really fun!  When we first got there, my mom and I were actually the only dancers with like 8 or so drummers so we got a lot of great dancing time!  I worked up a REALLY great sweat and had so much fun doing it!  I love belly dance J  If you ever get the opportunity to try it, DO IT!  It’s such a great workout and brings you in-tune to parts of your body that you never knew existed!  My mom is most likely going to be teaching a class in Florence starting in September if anyone would like to try it out J
So after the dance-a-thon (I danced for almost 1 hours! J), I had to get home and took a quick shower then got to baking my ‘diet’ lemon cake.  Nothing really special, just a box cake mix with unsweetened applesauce in place of oil and flax seed in place of eggs (1tbs flax dissolved in 3tbs water per egg).  Tomorrow is a co-worker’s birthday so we’re celebrating today and I volunteered to make the cake J It’s a lemon cake w/ lemon curd icing/dried cherry filling and cream cheese icing on the outside.  Yum J  I didn’t eat dinner last night so I think I may have a small piece of cake today… just a small one!
I wasn’t planning on skipping dinner but I just didn’t have time to eat!  And honestly, I wasn’t very hungry.  When it’s 1 million degrees outside, it kind of kills my appetite.  Water, on the other hand, I can’t get enough of that stuff!  I’ve been drinking so much damn water I think I may seriously float away!

I woke up late this morning (I know I said I was going to get up ‘early’ but… well, I didn’t) but still went to the gym!  I did the Week 1 of Couch to 5K yet again lol.  I’ll say, after not running for a month, it was a LOT more challenging this morning!  I got through it though. J  After that, I did 2 sets of 10 plie squats and then realized it was time to go.  Nothing very exciting but I am going to try to fit-in a workout or 2 this weekend since this week wasn’t the greatest. 
Recipe Time!
Simple Pasta:
Whole Wheat Pasta
4 Chicken Tenderloins, seasoned w/ Italian seasoning and granulated garlic, grilled
1 Yellow Bell Pepper, sliced
1 Red Onion, halved and sliced
Mushrooms (as many as you like)
EVOO
1tbs Balsamic Vinegar
1can Diced Tomatoes in Italian seasonings

-Cook pasta as normal, drain and rest in colander until veggies are ready
-In 1tbs EVOO, sauté the veggies: 1st, Bell Peppers, after about 2 min, add onion, after 3 more minutes, add mushrooms and then the balsamic vinegar.  Sauté until veggies start to soften
-Add can of tomatoes and pasta to veggies, combine and let simmer together on medium heat for about 10 minutes, check to make sure the tomato juice has not evaporated – if so, add a little low-sodium chicken broth.
-Toss in chicken and serve!
Like I said, I didn’t have any but Branden said that it was good!

Low Carb Yogurt

Lunch:
Chipotle Salad
(Lettuce, fajita veggies, black beans, chicken, all 4 salsas) *notice NO sour cream, cheese or guac!  That stuff ruins the health factor of all of the good ingredients J

Snack:
Protein Mousse

Dinner:
TBD – It’s Friday, who knows? Lol

Well, I guess that’s all I have for today!  I’m looking forward to weigh-in this weekend and see how I’ve done this week and to get started with next week’s progress!  I’ve been feeling pretty good about the progress I’ve made and the work I’m doing!  I can tell that I’m starting to look better b/c I’ve been getting more honks/looks/gestures from guys in my car lol.  Silly to measure my success this way but it’s the little things, right? J
