Long time, no post – I know. I’m not dead or giving up, life has just been so completely crazy and out-of-whack for the last 2 weeks, I honestly didn’t know what to write. Here are a few (not all great) key points about the previous 2 weeks of my life:
- My brother and his family were in town for 2 weeks, staying at my mom’s (across the street)
- We have celebrated 3 birthdays, 1 holiday and 1 going-away party, amongst the other ‘just because’ cookouts and family gatherings
- My knee still has not gained full function and, to be honest, I’m scared to push it too far. In other words, I haven’t worked out.
- I’m tan.
- I was sick for a week, screwing things up even worse.
- Me and carbs have been like 2 peas in a [large]pod.
- I’ve gained roughly 7 pounds.
- I’m still determined to lose the weight.
I can’t say that I’m proud of most of my lifestyle decisions over this extended vacation period, but I can say that I really want to get back to my normal life. I went to the orthopedic doctor this morning. I got xrays and met with the doc for a bit; he bent, poked and prodded (leaving me a bit sore L) and then prescribed me an anti-inflammatory and an MRI. I’m still waiting for them to call and tell me when my MRI appointment is, though they said it should be today or tomorrow. As it is, my knee feels exponentially better than 2 weeks ago, however, it’s definitely not 100%.
I feel really gross and just… heavy. I want to get a really good shirt-soaking sweat (how bout that visual?) going and feel healthy again! Today is a short day at work and I’m considering going to the gym while Nora naps to get on the elliptical for a while.
Food choices have been less than great, but I went grocery shopping this weekend and got all of my low-carb, healthy foods again for this week. Like I said, back to normal. I’m hoping that I can re-focus and re-group this week and really get back into a regular routine.
Today’s food hasn’t been my normal by any means, a banana w/ pnut butter for breakfast, tortilla chips and spicy organic guac for snack and I’ve yet to eat lunch. Tonight I’m going to make protein mousse and a batch of tuna salad so I’m ready for lunches this week! I did make a really delicious pasta dish for dinner last night (my husband’s recipe, actually!) which I’m happy to share:
Sausage Pasta (this made enough for about 8 people)
1 box Whole Wheat Penne
2pkgs Chicken Sausage (your flavor of choice, try for low-sodium/fat)
1 red onion, sliced
1 lg zucchini, chopped
1pkg grape tomatoes, halved
1pkg sliced mushrooms, halved
3tbs EVOO
2tbs garlic, minced
1/3c white wine
S&P
1tbs dry Italian Seasoning
Pre-heat oven to 400
-Boil water and cook pasta as normal
-Slice sausage medium/thin and cook in a large skillet in 1tbs EVOO and garlic
-Mix onion, zucchini and mushrooms in a bowl w/ 2tbs EVOO and S&P
-Roast veggies 15 minutes at 400, add tomatoes, and then roast another 15 minutes
-Once sausage is seared and starts to stick to the pan, de-glaze w/ white wine.
-After pasta cooks, add Italian seasoning.
-Mix it all together in a large bowl, add some shredded parmesan if you want and enjoy!
I think you can substitute a lot with that recipe, the sausage type, veggies, seasonings etc.
Well, I guess that’s about all I have today. Hopefully I have some knee news tomorrow and a better outlook!
