Hello! Sorry for the lack of post yesterday, I was a busy bee!

Food Yesterday:
Breakfast: Mocha Protein shake (vegan protein) immediately following workout, fresh juice w/ spirulina
Snack: Oatmeal
Lunch: Leftover veggie chili
Snack: Protein Tofu (I omitted the coffee and cool whip and used vegan protein – it’s really yummy!)
Dinner: Pasta w/ mushrooms and wine sauce (recipe below)
Today:
My workout this morning went well! Today was running day and I took another 10 seconds off of my mile time! Yay me! I’m feeling more and more confident with the running and I’m getting really excited to train for the 8k!

So I’ve discovered that one of the things giving the most difficulty with my running is something that shouldn’t effect it at all - my clothes! I’m having some serious fit issues (especially w/ underwear and pants) and am constantly pulling them up and adjusting. I need to start running in overalls.. or suspenders… this is just ridiculous. In all seriousness, I am definitely going to be investing in some new workout clothes that will help, not hinder, my progress.
I was thinking about my 8k training (I’m going to start next week) and honestly, my eyes started to well up with tears just at the thought of doing an 8k! My entire life, I’ve always wanted to be a runner but as I continued to gain weight and my health went in the opposite direction of that of a runner, I never thought it would happen. If and WHEN I complete this 8k, it will be one of the greatest accomplishments of my life! I’m really excited to be doing it with my big brother, too. J I’m going to continue to repeat my crossfit training that I’ve been doing for the last 4 weeks but I will use the Tuesday and Thursday treadmill days as my 8k training days. I have 19 weeks to train and I am confident that I can do it. I’m going to put together a training plan for myself before Monday so I have it all ready to go for next week!

Mocha Protein Shake immediately following workout
Fresh juice of apples (1 green, 1 red), carrots, spinach, cranberries, grapes, raspberries and blueberries… I just wanted everything this morning. J Unfortunately, I ran out of spirulina today so it was just juice. Still delicious. J
Snack:
Oatmeal w/ cinnamon, raisins and dried organic goji berries. (Goji berries are another superfood! Amazingly healthy and great in oatmeal! I’m going to try to make some granola w/ them as well)
Lunch:
Leftover veggie chili
Tiny piece of vegan cornbread
Snack:
Vegan Protein Tofu
Dinner:
Probably just leftovers – my fridge is full of them!
Mushroom Pasta
Whole Wheat Pasta (I used thick spaghetti or fettuccine would work) I used ½ box
1 small head Savoy cabbage, shredded
1tbs EVOO
3tbs minced garlic
4 portobello mushroom caps, stem and gills removed, sliced thin (easily remove gills w/ a spoon, just scrape gently)
1 small/medium red onion, cut in ½ and sliced thin
¾ c dry white wine (I used pinot grigio)
2 teaspoons whole wheat flour (all purpose works, too)
1tsp fine sea salt
1c grape tomatoes, halved
¼ tsp red pepper flake
- In a large pot, boil the pasta for about 4 minutes, add the cabbage and continue to boil another 4-6 minutes. Drain the pasta, reserving ½ c of the cooking liquid
- Meanwhile, heat the EVOO in a large skillet and sauté the mushroom and onion w/ garlic.
- While mushrooms are sautéing, whisk the flour into the wine in a small bowl.
- Saute until mushrooms start to release a bit of liquid, about 5-7 minutes then add the wine/flour mixture to the skillet. Season with the salt
- Cook for approx 1 minute until mixture begins to thicken, then add the tomatoes. Cook until tomatoes begin to break down, approx 4-5 minutes
- Return pasta and cabbage to the original pot and add reserved cooking liquid and red pepper flake. Toss the mushroom sauce in with the pasta/cabbage, combine well with tongs and serve!
