Howdy doody.
Sorry for the lack of posting yesterday, I was a very busy little bee.

So, as you may notice the actual time of the whole workout is the same as Tuesday… but my mile time dropped another 20ish seconds, I just took a little rest after the mile so the total time didn’t change… Anyway, I was happy with the progress!
Food Yesterday:
Breakfast:
½ banana w/ all natural peanut butter
Snack:
Oatmeal w/ raisins and cinnamon
Lunch:
Vegan Chili w/ brown rice
Snack:
A bit of brown rice and broiled veggies leftover from dinner the night before
Dinner:
Thai butternut squash soup over brown rice w/ slivered almonds
Aaaand now on to today J
So right now, I feel like shit. I’ll just go ahead and be Franklin D. Roosevelt with you. (be frank) My workout this morning was by far the most challenging that I’ve had to date on this program… and it’s all thanks to a little demon called the Weighted Alternating Jump Squat. Well, any jump squat, really… can suck it. Basically, I held a 40lb barbell across my upperback/shoulder area, squatted with my feet staggered and then jumped up in the air and switched my feet and did it again.. 25 times on each leg. It may not sound that hard, but I challenge you to try it! Ugh… anyway here’s my workout from today:

So my body is killing me right now – my hamstrings are still sore from my Wednesday workout, my lower back is still sore from Monday… and Wednesday… and today just added to it. Okay I’m going to stop complaining now – I know these workouts are sculpting my body into a lean, mean fighting machine! Actually, I was looking in the mirror last night and my face looked a bit more ‘chiseled’… and my underarm area looked far more trim… so something’s working! It’s so exciting to see the transformation of my body… I still look in the mirror and see this giant body.. it’s harder for me to see the real change since I see myself so often so when I do notice things, it makes me feel really great. J
Food Today:
Breakfast:
Piece of vegan pumpkin bread
Snack:
Oatmeal w/ raisins and cinnamon
Lunch:
Leftover vegan chili w/ brown rice and sprouted grain tortilla chips (like 5 chips)
Snack:
Sprouted grain tortilla chips and 1tbs light hummus
Dinner:
TBD – I’m going to a party tonight, probably a soup of some sort.
2 nights ago for dinner I made tacos! They were really yummy:
Veggies:
1 Red Bell Pepper, sliced
½ Red Onion, sliced
2 Small Tomatoes, large chop
2tbs EVOO
1tsp Cumin
1tsp Chili Powder
1tsp Garlic Powder
-Preheat oven to 400
-Toss veggies in EVOO and spices
-Roast for about 20-30 minutes, stirring every so often and keeping an eye so they don’t burn
Mushrooms:
1lg Portobello mushroom cap, stem removed and sliced
1tsp EVOO
2tsp minced garlic
1c cooked brown rice
Squeeze of lime juice
-Saute mushroom in evoo w/ garlic and season with salt
-Stir-in brown rice and cook enough just to heat-through, drizzle lime
So for my tacos I layered as follows:
Toffuti vegan sour cream
Organic guacamole (I made w/ avocado, red onion, cilantro, lime, salt)
Mushroom Mixture
Roasted veggies
Then rolled it all up and it was delicious! I use the sprouted tortillas found in the freezer of the organic food section, they’re good! A little chewy but totally hearty and delicious. I had 2 left and they were about to go bad so I just cut them up into small triangles, sprayed with non-stick spray and sprinkled with salt then baked at like 375 for about 5 minutes, turned, then another 5 min. Yum!
Well this weekend is going to be busy! We have a Halloween/birthday party tonight, Branden’s work is throwing a fall festival tomorrow then Nora, my mom, my grammy and I are going to Louisville to go to an art festival. We’re staying the night in the ville then going to a pumpkin patch/vineyard on Sunday! Sounds like a whole lot of fall fun to me. J
Well, that’s about all I have for today… we’ll see how weigh-in goes tomorrow. At this point, I don’t really have any expectations but am interested to see the outcome.
