TGIF!!! That’s for damn sure! Shooo I made it through week 1 of this training and I must say… ouch. My quads are so sore I’m walking around like I’m constipated but dammit I feel good about what I’ve accomplished this week!
Today’s workout went as follows:

Yeah, that says 50 pushups. To my surprise, they came relatively easily! The last 10 or 15 were a bit more difficult than the first, of course, but I did them all! I had to pause briefly while doing pushups and also while doing the squats but everything else I just muscled through and did them all non-stop! Next week looks a bit more daunting and actually, I don’t know what ½ of the exercises are… but I’m going to wait until the night before to have Branden explain them each to me so I’m not dreading them J
I’ll be honest, I’m looking forward to the weekend and having 2 days of rest! (well, no formal workouts at least J)
Last night I made a less than nutritional choice and just had chips and salsa for dinner. It was so delicious I just kept eating them and then I was about to heat up some ratatouille when I realized that I wasn’t hungry at all so I just called it a night lol. It was, at least, all-natural artichoke garlic salsa and organic spicy blue corn tortilla chips! That helps, right? J
So I mentioned yesterday that I was having some fall cravings… so last night I baked low-fat vegan pumpkin bread! It’s REALLY yummy and nearly guilt-free! Recipe below – comes highly recommended J

Small slice pumpkin bread & grapes

Thai Butternut Squash soup over brown rice and edamame (this recipe made SO much soup! I have a ton left, I’ll definitely be freezing some!)

TBD – It’s Friday! I don’t really know what that means but I might make vegan pizza or something?
Pumpkin Bread
1 ¾ c Whole Wheat Flour
1tsp Baking Soda
¾ tsp Fine Sea Salt
2tsp Cinnamon
¼ c Light Brown Sugar
¼ c White Sugar
½ c Unsweetened Applesauce
3 ½ tbs Ground Flax Seed dissolved in 9tbs Water
1 ½ c Pureed Pumpkin
1/3 c Water
½ c Chopped Pecans
- Pre-heat oven to 350
- Sift flour, baking soda, salt and cinnamon together into a large bowl
- Add sugars and whisk to combine well
- Make a well in the dry ingredients and pour-in applesauce, flax dissolved in water, pumpkin and water
- Mix well to combine
- Stir-in Pecans
- Spray 2 loaf pans w/ non-stick spray and split the batter between the 2 pans. *I also sprinkled a bit of extra chopped pecans, brown sugar and white sugar on top of the loaves before baking
- Bake for about 1hr, until a toothpick comes out clean.
- Allow to cool and try not to eat an entire loaf in one sitting!
- *Please note – these do not rise as much as normal bread, so be prepared for shorter loaves. These are also rather ‘gooey’ – so no worries, it’s cooked J
Definitely one of my favorite things I’ve cooked as of recently! I think next time I’m going to add some pumpkin pie spice to get the other great fall flavors going!
So I was getting dressed this morning and I took a look at myself in my skivvies (that’s underwear for you non-pirate types) and I must say, I was kind of pleased with what I saw! My belly seems to be flattening some and everything else is just looking a little… smoother. J Speaking of looks – tomorrow is picture day! I’m pretty excited for this one J I have to find a new outfit b/c the pants that I usually wear for picture day are way too big now and even the tank tops are a bit droopy. Such terrible problems to have, right? OH! Color me excited, I ordered a pair of jeans size 20 and I wore them yesterday! They fit SO comfortably and my boss said they even looked a little baggy in the legs… she may have been a little generous but hey! I like it! I think I may do a little shopping this weekend.. just don’t tell Branden J
Well, I suppose that’s all I have for today. Weigh-in tomorrow along with picture day… as I mentioned I don’t have my hopes too high for this weigh-in but we’ll see, I could be pleasantly surprised!
