Technically, this weekend was no longer than any other... but it surely felt it! Here’s a brief re-cap:
Friday: Came home and went shopping with Kristen. Rain began to POUR out of the sky (all of my windows were down, joy!) and decided to run around in the rain (fun!). Then, we ate pizza (I know, I know) and just hung out in sweatpants and watched TV.
Saturday (my birthday!): Pedicures, Lunch, coffee and movies (Bridesmaids – SEE IT!) with my sister followed by a surprise Birthday party at my mom’s! Alfresco style, fully equipped with red and white check table clothes, bistro string lights, grilled pizza, tiramisu bday cake, wine-o-plenty and Italian music. It was the best birthday EVER!
Sunday: Shopping and tanning with mom and Nora, grocery, dinner at mom’s, play time then bed.
It was a great weekend! I had so much fun! Downside, I ate terribly and didn’t work out. In other words, I gained 3 ½ lbs last week. Not only from my weekend but from not being nutritionally strict last week or disciplined to my workouts. Honestly, I’m not freaking out about it! When I began this journey, I knew that there would be ups and downs (although self-induced), and I have accepted that. I also committed that I would continue to ENJOY my life as I pursued my goal. I also knew that after my fun weekend was over, it was back to crunch time (no pun intended) this week! So with that said, this is the workout that I did this week:

I’m going to be adding more weight-training back into my workout program. I’ve been neglecting it a bit, not because I don’t want to do it, but because my workouts have been so unorganized and honestly I just haven’t been getting to the gym early enough.
I mentioned in Friday’s post that I had a Mexican Pizza recipe that I was going to share, so here it is:
Mexican Pizza
2 Whole Wheat Tortillas (low carb/low calorie suggested)
2 Boneless/skinless Chicken Breasts, seasoned w/ Cumin, Granulated Garlic & Chili Powder
1can Black Beans, lightly drained
1can Diced Tomatoes w/ Jalapenos
1 Bell Pepper, sliced
½ Onion, sliced
2tsp Cumin
2tsp Granulated Garlic
1tbs + 1tsp EVOO
Fat Free Cheddar Cheese
Handful Cilantro, chopped
Fat Free Greek Yogurt
Squeeze of Lime
Pre-heat oven to 350
-Grill chicken, let rest 5 minutes and chop small.
-Sauté bell pepper and onion in 1tbs EVOO w/ 1tsp cumin and granulated garlic until soft, about 15 minutes. Watch pan, when veggies start to get dry, add juice from canned tomatoes.
-In food processor, puree black beans w/ 1tsp EVOO, 1tsp Cumin and 1tsp garlic.
-Lay 1 tortilla on foil-lined cookie sheet then spread 2 spoonfuls of bean puree, sprinkle w/ a little cheese and cover w/ 2nd tortilla.
-Sprinkle a bit of cheese on 2nd tortilla then layer peppers & onions, canned tomatoes (scoop out w/ fork to eliminate juice) and chicken. Sprinkle a bit more cheese and ½ of the cilantro.
-Bake until cheese melts, about 5-10 minutes – keep an eye on it so it doesn’t burn!
-Remove from oven, sprinkle remaining cilantro and squeeze lime juice over it. Slice like a regular pizza and serve with a dollop of Greek Yogurt. Yum!

My wonderful husband bought me a fancy camera for my birthday! A Nikon D3000 – so I should be posting many more photos from here out!
Another really awesome gift that I received was a Nike+ iPod Sport Pack from my sister! Basically, it’s a sensor that you put in your shoe and it syncs with your iPod to track mileage/pace, etc when you’re working out! Isn’t that awesome?! I can’t wait to use it J
Overall, I still feel focused - much more so than last week, actually. I’m very tired today but I’m sure that’s left-over fatigue from the weekend... I’m going to try to go to bed early this evening J I just looked at a few pictures from my birthday party and I’m relatively happy with the way that I’m progressing – though I see that I still have a long way to go. Slow and steady wins the race though, right?
